The one thing our family always looks forward to are birthdays. No matter what is going in our lives, we always make each birthday special, and it is safe to say we go ALL OUT for the girls’ birthdays. This year for my birthday we took a trip to Cabo, and for my husband, Randy’s birthday which is September 2nd, we are taking another trip. We plan to discover Texas Hill Country, a place he has never been. Since we will be out of town for Randy’s 37th birthday, we wanted to surprise him with a birthday cake before we left on our road trip.
What better way to say “Happy Birthday” than with a homemade cake from Betty Crocker™? For several years Betty Crocker™ has been by my go-to when I want to make a birthday cake for someone special in my life. With Betty Crocker’s cake mixes and icings the possibilities are endless. On my latest shopping trip to Walmart I picked up Betty Crocker™ Cake Mix, Betty Crocker™ Icing, and Betty Crocker™ Sprinkles. With the kids’ help, we chose to make a Rainbow Surprise Inside Cake which we found on Betty Crocker™’s website. The cake itself looks like a regular multi-layered cake on the outside; however, when you cut it open a surprise filled with candies falls out of the center.
It had been a long time since I have made a cake, and this was my first time trying out this recipe from Betty Crocker™’s website. Luckily, Betty Crocker™ cake mix always bakes to perfection when you follow the directions, so the baking part was easy peasy. Since I did not have an 8-inch pan I baked my cake in a 9-inch pan. After baking the four layers and letting them cool, I cut off the rounded tops as the instructions stated. Then, it was time to cut out the centers of two of the layers and start stacking and icing! Putting the icing on the cake was my daughters’ favorite part. It might have had something to do with all the taste testing they were doing during the process. After we finished icing and stacking the first three layers, it was time to fill the surprise inside with Betty Crocker™ Sprinkles and M&M’s. Once that was done, we added the top layer and iced the entire exterior of the cake with Betty Crocker™ Vanilla Icing. To top it off we added some sprinkles and “37” candles. Then it was time to surprise Randy with his homemade cake. Randy loved the cake especially because our girls helped make it, he also said it taste amazing.
100% of this cake was made with love. My girls and I all had so much fun recreating this recipe and surprising Randy. This is truly a birthday he will never forget. It’s someone’s birthday somewhere. Say Happy Birthday with a cake from Betty Crocker™.
